Meridian Chai Pecan Pie Bars

Birthday Cake Frosting

Step 1: Make the Tea Butter:

Ingredients:

1/2 cup (1 stick) butter
2 tsp Meridian Chai or 2 pouches Meridian Chai

Directions

1. Place butter in a saucepan on low heat
2. Once the butter begins to melt, stir in tea. Steep tea in heating butter, being careful not to burn it.
3. After butter has begun to clarify, cover and remove from heat, allow tea to continue steeping for 5 minutes
4. Strain the tea from the butter, making sure to press any excess butter from the leaves
5. Transfer the infused tea butter to the fridge to solidify for at least 5 minutes

Step 2: Make the Tea Concentrate:

Ingredients:

2 tsp Meridian Chai or 2 pouches Meridian Chai
1 Cup (8oz) freshly drawn cold filtered water, heated to 200°F-212°F

Directions

1. Steep the pouches 5-6 minutes
2. Use immediately

Step 3: Make the Bars:

Ingredients:

Crust
1 3/4 cups all-purpose flour
3/4 cup Tea Butter softened
1/3 cup sugar
1/3 cup coarsely chopped pecans
1 tbsp Orange Zest

Filling
1 1/2 cups dark corn syrup
2/3 cup packed brown sugar
4 large eggs
6 tablespoons all-purpose flour
2 teaspoons Tea Concentrate
1 teaspoon salt
1 1/2 cups coarsely chopped pecans 

Directions

Heat oven to 350°F.
 
Begin by making the crust.  Combine the flour, tea butter and sugar in a medium bowl. Mix until it resembles coarse crumbs. Stir in pecans & orange zest.
 
Press crust evenly into an ungreased 13x9-inch baking pan. Bake until edges are golden, about 20 minutes.
 
Now for the filling.  Mix all  ingredients, except the pecans, in a bowl. Add in the pecans. Spread evenly over hot, partially baked crust. Bake 30-35 minutes or until filling is set and knife inserted 1-inch from edge comes out clean. Allow to cool and then refrigerate. Cut into bars & serve.
