Shincha, or “new tea” in Japanese, is the very first flush green tea of the season and the most sought-after variety of green tea in Japan. Shin Cha is technically the same as Sen Cha which is made of young tea leaves, but only the tea leaves harvested in early spring are called “Shincha.” The tender Shincha leaves brews a delicious cup with an amazing aftertaste like none other.

Immediately after harvest, tea leaves are steamed, and Sugimoto’s Shincha is steamed longer than others. This steaming style is called “Fukamushi (deep steaming).” In Japanese tea industry, there are three types of steaming: Asamushi (light steaming), Chumushi (medium steaming) and Fukamushi (deep steaming). The Fukamushi leaves are broken and powdery because of this extra steaming time, giving its best characteristics—deep rich aroma and gorgeous water hue instantly.

The quality of tea is affected by the quality of water used to prepare it. Using filtered or bottled water is best. If possible, avoid brewing tea with tap, distilled or mineral water. Never over-boil water, as it results in flat-tasting tea.

1) Heat filtered or bottled water to 160F or in the alternative heat to a boil and let sit for 1-2 minutes. 2) While the water is heating pour hot water into your teapot and cups, let sit and then drain completely. A warm teapot will maintain the requisite temperature for superior tasting tea.

Whole Leaf Tea
Prepare Mighty Leaf teas using a teapot, paper tea sachet, infuser or traditional brewing methods. Use one level tablespoon of loose green tea per 8 ounces of water.

Infusion Time
Pour water over tea leaves. Keep teapot covered to retain heat. Time steeping carefully and infuse for 1 1/2 minutes.
