After steeping, I cool the tea down with either plastic ice cubes or put it in the refrig. before adding ice. I also use filtered water and I buy my ice for tea, because I don't like the taste of tap water or even the filtered refrigerator water as it melts. I'm pickly, but the tea tastes good to the last drop this way. :-)
