Earl Grey Eggnog

Earl Grey Eggnog

Why buy eggnog when you can make it at home? Our version offers the citrusy notes of bergamot in Earl Grey into this classic holiday drink. Add rum or bourbon to make an adult-friendly concoction. To make a version the whole family can love, ditch the caffeine and use our Mighty Leaf Tea Earl Grey Decaf tea.

Makes 4 cups (8 servings)

2 1/2 cups whole milk
1/2 cup heavy cream
1/2 cup granulated sugar
1/4 teaspoon kosher salt
5 Mighty Leaf Tea Organic Earl Grey or Earl Grey Decaf tea bags
6 large egg yolks

1. Pour the milk and cream into a heavy-bottomed saucepan set over medium heat.

2. Sprinkle the sugar into the milk and heat until just below boiling, or when bubbles rapidly break out around the edge of the saucepan. Turn off the heat. Stir the milk.

3. Plunge the Earl Grey tea pouches into the hot milk. Steep for 10 minutes. Remove the tea pouches, pressing them against the side of the saucepan to extract any liquid.

4. In a separate bowl, whisk the egg yolks until smooth. Pour and whisk in 1/4 cup of the hot milk into the eggs. Continue gradually pouring in about 1/4 cup of the hot milk into the yolks, whisking continuously until combined.

5. Pour the whisked mixture back into the saucepan, set over low heat. Whisk regularly for about 8 minutes or until the temperature registers 160F.

6. Pour the eggnog into a pitcher. Chill until cold. It will thicken more in the refrigerator. Store in the fridge no longer than three days.

7. Enjoy!
